Coconut & Cinnamon Roasted Sweet Potatoes 

dairy-free, gluten-free, paleo, vegan 

makes 3-4 servings


  • 3 Medium Sized Sweet Potatoes, skin removed and cut into about 1 inch cubes
  • 2 tbsp. coconut oil or ghee, melted
  • 1 tbsp. coconut sugar 
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. sea salt


  • Preheat oven to 375 degrees
  • Place cubed potatoes into a medium sized bowl and add the rest of the ingredients, mix everything together well
  • Transfer to a covered sheet pan and spread potatoes out the best you can
  • Bake for about 25 mins or until golden and soft when tested with a fork
