I'm CRAZY for veggie-fries. No seriously, I LOVE THEM. These eggplant fries are crunchy, cheesy (but dairy-free) and the perfect addition to a huge Chelsea salad bowl, to the side of a great chicken dish or a burger or as a snack dipped in a fat-packed healthy dip.
