Dairy-Free Cauliflower Mash 

dairy-free, gluten-free, paleo, vegan 

makes 2-3 side dish servings

ingredients:

  • 1 medium cauliflower head
  • 2 tbsp. unsweetened coconut milk
  • 1/2 tsp. sea salt
  • sprinkle of black pepper

method:

  • Cut cauliflower into medium-sized florets and remove stems as much as possible
  • Steam cauliflower by preferred method until very soft
  • Transfer cauliflower to a food processor or blender and add coconut milk and sea salt
  • Blend until very smooth 
  • Transfer to a serving bowl and sprinkle with black pepper
